Glossary

Aji Casero:

This is a salsa made of tomatoes, onions, chillli, spring onions ,coriander and lime juice. You have this salsa with the empanadas de carne (meat patties) or you can put it on top of grilled steak.

 

Empanadas de carne o queso:

These are meat patties made with maize flour filled with meat (or just cheese) which has been precooked in ahogao salsa .

 

Arepas de queso:

These are made with maize flour and mixed with some mature cheddar and then deep fried in vegetable oil. These are delicious with my sour cream spring and garlic dip or pico de gallo dip.

 

Pico de gallo:

This is a dip made with avocado, feta cheese, tomatoes ,onions and lime juice. Similar to guacamole.

Ahogao salsa:

This is a salsa very popular in Colombia, in fact many dishes are cooked in this salsa. It has tomatoes, onions, coriander, sweet peppers and spices including cumin. This is delicious on top of pan fried/grilled steak, as a dip for arepas or empanadas, and is also used in cooking lentils, beans or meats.

 

Pasteles, Tamales y Hallacas

These are parcels made with maize flour or rice (en la costa) and filled with a very meaty stew cooked with a variety of ingredients including olives, capers, almonds, raisins, sweet peppers and mustard (Hallacas Venezolanas) or just various meats cooked in ahogao salsa(pasteles or tamales Colombianos). This is wrapped in banana leaves and then boiled.
